Welcome to this weeks Sumptuous Sunday entry. Potatoes are loved in our home. I found this recipe last year on chabad app I have and we quite enjoy it. It is flavorful and a wonderful side dish that goes with many other foods.

Roasted Potatoes
Ingredients
ITBS Salt
1/4 C Olive Oil
Pepper to taste
1 TBS Italian Spices
1 TBS Oregano
6-10 cloves Garlic minced
1/2 tsp Thyme
4 lbs mixed potatoes- any kind including yams, sweet, purple or fingerling
Directions
Preheat oven to 400F
- Peel potatoes if desire. Cut to approximate same size
2.Put the potatoes in a large bowl, and add garlic and spices. Don’t forget to add a few twists of the pepper grinder.
3. Pour in about half (1/8 C) of the olive oil. Toss with potatoes and spices. If that doesn’t seem to be enough oil to very lightly coat the potatoes, drizzle more on until it seems to be a reasonable amount.
4.Toss again, and then pour the potatoes into a 9X13″ casserole dish.
5.Cover with aluminum foil and put in the oven. 45 minutes later come back and take off the aluminum foil
6.Cook for an additional 10-15 minutes or longer if the potatoes aren’t totally soft yet.

These potatoes are excellent both hot and cold.
